Pumpkin Pie Recipe

Happy November Everyone!
Last week it was Halloween, we don't really celebrate it in Australia like it is celebrated everywhere else, so two years ago I started a new tradition where I bake a Pumpkin Pie on Halloween. It's not technically a "tradition" just yet as I have only done it twice now. Last year we were having our kitchen remodelled so I wasn't able to then. But I did it this year!

It all started with when I got up I peeled and cut some pumpkin into chunks and boiled it. While that was boiling I made some pastry for the pie crust. I put that in the fridge to chill for an hour or so. After the crust had chilled I rolled it out and put it in a pie pan. I pricked the bottom of the pastry covered it with baking paper and put some uncooked rice on it so I could blind bake it. It was in the oven for 10 minutes on 160 degrees before I took the baking paper and rice off. It was then back in for 10 more minutes.
While the crust was baking I started on the filling.
I found a random recipe online that didn't need evaporated milk because I don't understand the need for it.
First I mixed the two sugars and eggs together, then added the vanilla essence, salt, cream, pumpkin and spice mix. Once that was all mixed together I just had to wait for the crust to finish and cool slightly. 
I made my own pumpkin pie spice mix the first time I made pumpkin pie. It's just a mix of ground cinnamon, ginger, nutmeg, allspice and cloves.
While I waited I rolled out the last little bit of extra pastry and cut out some sheep shapes with a cookie cutter. When the crust was ready I poured the pumpkin mixture into it, coming up just to the edges of the crust. Then I arranged the little sheep around the edges. I baked the pie for 45 minutes. Then took it out and let it cool completely.
Later I served it cold with a dollop of cream. It was one delicious pie.

Ingredients:
Pie dough for one pie
3 large eggs
1/2 cup granulated sugar
1/3 cup brown sugar
2 cups pureed pumpkin
3/4 cup cream
1/2 teaspoon salt
2 tablespoon pumpkin pie spice mix
