Frittata Cups

Frittata cups that are easy to make and convenient. Eat them cold, eat them heated, keep them in airtight containers in the fridge. They are great for snacks or even a meal like breakfast!!
Ingredients:
5 Eggs
¾ cups milk (of your choice)
2 cups Spinach chopped
2 Spring Onions sliced
1 whole Capsicum diced
1 punnet cherry tomatoes cut in half
8 strips of bacon diced
½ cup Cottage Cheese
2 Teaspoons dried Oregano
Teaspoon of Butter
Salt and Pepper
Method:
1. Preheat
your oven to 180 Celsius or 356 Fahrenheit. Prepare your cupcake tin, with silicone
liners, don’t have any? Just spray on some non-stick cooking spray or butter.
2. Cut
up all the vegetables and dice the bacon.
3. Cook
your bacon in a pan for 5 minutes or your desired crispiness. Add some butter if
it’s a bit dry then add the spinach until wilted.
4. In
a jug or bowl (with a spout) add your eggs, milk, oregano,
salt and pepper, mix
to combine.
5. Start
filling your cups, with your bacon and spinach mixture and all your veggies. Add
some dollops of cottage cheese on top. Slowly pour your egg mixture in being
careful not to overfill them.
6. Put
them in the oven for 20-25 minutes or until cooked through and golden brown.
Serve with some fresh veggies or a salad,
enjoy!!
