Fulfilling Chicken Salad

Grocery Shopping is one of my favourite days of the week. I don't know what it is about it but I love going. I actually look forward to going and seeing what I'm going to buy. This time I got a load of salad ingredients and made a BIG bowl of salad to last me for lunch for a few days. It was a delicious salad and here is what I used to make it.


Ingredients:
Cabbage, shredded.
Carrot, peeled into ribbons.
Quinoa, cooked.
Cucumber, cubed.
Cheese, cubed.
Tomato, diced.
Gerkins, sliced.
Pickled Onions, cut in quarters.
Canned Corn, drained.
Capsicums, diced.
Avocado, diced.
Chicken optional, cooked and shredded.


I'm not including any measurements because I don't remember and it's really up to personal preference. Don't like cheese? Don't add it. Want tuna instead of chicken? Go for it! 
One thing I will say is I didn't mix the chicken in with the rest of the salad. I kept it in a separate dish and added it when I wanted and in the amounts I want. 

Once you've got all your ingredients, you cut them, dice them, drain them, cook, prep them to however you desire then put all the ingredients in a big bowl or container and combine. 

Serve yourself up a big bowl had some shredded chicken then drizzle on your dressing of choice. I had some french dressing for a couple serves, even some Ceasar salad dressing would work. Like everything else in this recipe, it's up to personal preference.
