Pies and Things!

One of my weirdos were over yesterday, we'll call her Kitty. While Kitty was here I was flicking through a magazine and, came across a recipe for 'Tuna Cheese Crust Pies'. I showed her and we decided to make them with a few tweeks.
That night, after goingt to the shop to gather a few ingredients. We made 'Bacon Cheese Crust Pies' we swapped the tuna for bacon and the lemon for relish sauce. The recipe said it was going to make 6 large pies, but we made 12 cup cake size ones instead. We also had a lot of mixture left over which we turned into scrambled eggs and had on toast for breakfast this morning. Instead of semi-dried tomato on top of thm we cut up a normal tomato and covered them with grated cheese. I'll put our version of the recipe below. V
Today we also made choc-fudge brownies (from a packet). Chewy, gooey and delicious. ;)

Bacon Cheese Crust Pies!!
Ingredients:
1 1/2 Cups plain flour, sifted.
200g tub of Cottage Cheese.
125g Butter, melted.
5 eggs, beaten.
3/4 Cup milk.
200g Bacon, chopped or in pieces.
1 Tablespoon relish sauce.
1/2 Cup Grated Cheese.
1 Roma Tomato(doesnt need to be roma).
Step 1.
Preheat oven to 200oC (180oC fan-forced) with a tray. Grease muffin or cupcake pan.
Step 2.
In a bowl, combine flour, cottage cheese and butter. Using finger tips, rub mix to form a dough. Wrap in plastic wrap and put in fridge for 15 minutes.
Step 3.
Roll dough between two sheets of baking paper untill 3mm thick. Using a 16 cm cookie cutter (or a mug cause you dont have a round cookie cutter like me), cut out rounds from pastry. Ease into recesses to line. Prick all over with a fork and carefully put into oven onto the tray. Bake for 5 minutes. If mixture is a bit thicker, (like mine was) give it a few more minutes.
Step 4.
When you take the pastry out, reduce the oven to, 180oC (160oC fan-forced).
Step 5.
In a large jug (or mising bowl), whisk eggs and milk together. Add bacon and relish. Season to taste (which I forgot to do). Pour (or ladel) evenly amoung cases. Add tomato slice, sprinkle (or cover) with cheese. Bake for a further 20 to 25 minutes until set and golden. Serve warm or cold.
If you do try the 'Bacon Cheese Crusted Pies', becareful when putting things in and out of a hot oven. And allow the pies to cool a bit before taking them out or eating them because they are very hot. Enjoy!! :D
