Foodie Friday!!

As you may or may not know, depending if you read Monday's post or not. This month I am going Vegetarian. I've done it before, so I thought I would try it again. It's basically me taking meat out of my diet for a whole month, in this case, 29 days. That just means more vegetables and experimenting. Hope you enjoy!
Breakfast:
Went all out for breakfast this morning. Three of us live in this house (four if you include Marvel) and I'm usually the first one up and last one down. Which means I get to have my first cuppa of the day by myself. This morning I had a latte while I caught up on some youtube. Then I showered and got dressed and that's when everyone else started to get up. So I had a cappuccino and a chocolate biscuit while everyone else had their first cuppa. That was my breakfast.

Lunch:
First off, my lunch doesn't look that appetising but trust me it's delicious. Yesterday I made a big salad to eat for lunch, snack, to last a couple days. I was wrong. I ate the last of if today for lunch. It was that good. I make a lot of salads because I really enjoy them and they usually have the same ingredients. Lettuce, tomato, cucumber, grated cheddar, grated carrot, pickled onions and mayo. This time, I thought I would spice it up a bit with some Quinoa and some roasted sweet potato. It gets better with every bite. I also dressed it will some Italian salad dressing. I will most certainly be making it again. YUM!

For an afternoon snack, I decided to treat myself to some 'Favourites' chocolate and a glass of coke. I probably had more chocolates than I needed but what the hey I don't do it often. Plus I'm eating healthy so it balances out (I lie to myself).
Tea:
For tea, I wanted a burger. As this month is veggie month, I opted for a veggie burger. I found one the other day on The 'Everyday Food' youtube channel and I wanted to give it a go. It's a quinoa and feta burger. You combine some mashed kidney beans, grated carrot, parsley, egg, feta cheese and, of course, some quinoa. They turned out a lot better than expected, a little crumbly but that could be because I ended up pureeing my beans instead of mashing them. I will leave the link below if you are interested in giving them a go. I served mine with some aioli on a bun with cucumber and lettuce.
